There are some days when your inner-Homer Simpson comes forth and you crave a donut. But while fried dough sounds good in theory, more often than not (and especially when they've been ultra deep-fried), you're left with that sickly, oily, fried hangover to deal with. Not to forget to mention, some donuts just taste like a bland doughy ball of disappointment.
But alas, we're excited to share a healthy, vegan and dairy-free baked version with you that will save the donut-day. This recipe was created by Plant Steph using some of our F4U acai berry powder. What's so great about this recipe, is that it shows an alternative way to use acai berry powder that doesn't involve an acai bowl. Can we get a hip-hip-hooray?!
If you haven't heard already, acai berry is all the rage these days. Sustainably harvested from the depths of the Amazon rainforest (or more conveniently, in a freeze-dried powder form from our online store - you can thank us later for saving you that expensive round trip flight to Brazil), it's an ancient superfood come modern health fad that we've actually fallen in love with. That age-old saying, what was once old is made new again, couldn't be closer to the truth. Why is it so great? Firstly, it's packed full of great vitamins and antioxidants. Secondly, it makes a darn good smoothie and acai bowl when done correctly. So we'd like it to stick around longer than celery juice please. Because let's face it, something as rich in antioxidants as acai berry, that also makes darn good smoothies and acai bowls (and baked donuts!), we want more of. We'll save the celery for the peanut butter.
(makes 9 mini donuts)
- 125g plain flour
- 50g coconut flour
- 70g sugar
- 25g F4U acai berry powder
- 2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- zest of 1 lemon
- salt
- 40g coconut oil
- 200ml non-dairy milk
- lemon juice
- 1tsp vanilla extract

Try our F4U Creamy Cacao Smoothie!
Preparation Time: 2 minutes
What you will need:
200ml of your favourite milk
1 Small Banana
1 Serve of F4U Whey Protein Concentrate (25g)
1 Serve of F4U Cacao powder (10g)
1 Teaspoon of Rice Malt Syrup (or honey)
2 Ice cubes
Coconut Sprinkle (optional)
Directions:
Simply add all ingredients in a blender and blitz for 1 minute or until combined.
This smoothie is the perfect choc treat your entire family will enjoy while getting over 20g of Protein plus all the antioxidant goodness of Cacao!
